Christmas Pictures 2016

We didn’t get many Christmas pictures taken this year, mostly because taking a picture with a 2 year is near impossible, but we did manage to get a few! I am absolutely loving this time of year and am soaking up every bit of it with Carson. He is at such a fun age and watching it all through his eyes makes it all the more magical. We have been trying to add in more of our own Christmas traditions this year, so we have started going through an advent series. I am really excited to start incorporating that every year and teach Carson the true meaning of Christmas.  This time of year is just simply the best, SO SO thankful and blessed! Love this little family of mine!

Carson’s Baby Dedication Day

Yesterday, was Carson’s dedication day at church. It was a great day and we had so many friends and family there with us as we dedicated Carson to the Lord. Ever since Carson was born I knew I wanted him to be apart of a baby dedication service. Baby dedication to us means that we as parents are publicly, before the church, promising to raise our son in the love and admonishment of our Lord and savior, Jesus Christ. In the Christian faith, we believe you are not saved until you profess Jesus as your lord and savior and call on him to be apart of your life. We know that dedicating Carson does not insure his salvation but rather a pledge to raise Carson up in the biblical truth. We hope and pray that Carson will one day accept Jesus into his heart and will be a light for him. Carson’s dedication yesterday was kind of an eye opener like “wow, we are really doing this!” God has entrusted us with this precious gift to help grow, nurture and love. What an amazing and overwhelming thought! Our prayer is that we will help lead Carson to walk with the Lord and that he will love the Lord with all his heart.We are so blessed to have such amazing family, friends, and church members that will come along side us as we raise our son. It was such a special day and one that we will always cherish as parents.

This wasn’t taken yesterday, but my sweet sis-in-law took it a couple weeks ago and I just had to share! He looks so grown up!

Labor day weekend!

You know it was a good 3 day weekend when Monday night rolls around and you feel rested, relaxed, and ready to take on the rest of the week. And that’s exactly how Jordan and I felt, it was the perfect weekend. We didn’t have to much planned and even enjoyed a relaxing day up north with family. These are the times that I want to look back and remember. Carson has been a lot of fun lately and is constantly making us laugh. It was a great weekend spent with family and friends. We also were able to get some projects done around the house that we have been wanting to do for a while now.

On Saturday, i woke up bright and early to get in 10 miles before it got too hot. Saturdays are usually my longer run days and I have been really enjoying it. Having a couple hours of peace and quiet is therapeutic for me! After my run, I came home and made some protein waffles and got cleaned up. Our whole family decided last minute to take a trip up north to Prescott so we quickly loaded up the car and were on our way!

We Spent some time by the lake and Roxy decided it was a good idea to go swimming and chase the ducks!

We had a great time up north even though it was just for a few hours!

On Sunday morning, we went to church and then decided to do some projects around the house. One thing that we have been wanting to do for a while now is fix our front door. We had a ugly security door on the front and I’m not sure why it has taken us this long to take it down and paint our front door, but that is what we did and it turned out even better than i thought!

After working on the house all day, we were wiped and decided to grab a quick dinner at the habit and called it a night!

Monday we pretty much did nothing. Which was perfectly ok with us. We went to the gym in the morning, did a little cleaning, and did some baking of course! I made some Healthy peanut butter cookies that I plan on sharing here soon. All in all, it was a great weekend and feel so full of thanks going into the week ahead. Now that labor day has come and gone, we are so ready for fall and all the exciting things that come with this season!

Cashew Butter Protein Balls

We have had a huge jar of cashew butter sitting in the fridge for the longest time now and im not really sure why! I forgot there for a little while how yummy and slightly sweet cashew butter is. I have been wanting to make some protein balls for a while now to have before or after workouts or as a quick snack at work. So i decided why not make some with cashew butter? Seriously, so good. I even have it for dessert most nights because it tastes like a sweet and salty cookie!

Here is what you will need:

  • 5 Tbsp. of Cashew butter (I used Sprouts brand, salted)
  • 1.5 tbsp. of milled  flaxseed
  • .5 scoop of protein powder
  • .3 cup of steel cut oats
  • .5tbsp of Manuka honey (any honey will do, but manuka honey has really great health benefits)

Add a couple tablsepoons of water or unsweetened almond milk until reached desired consistency. Makes about 10 balls.

Okay, I am totally aware of the fact that these look like turd droppings but I promise they make up for it in taste!

Nutrition facts: 80 calories, 4.5 Fat, 6 Carbs, 3.5 Protein

Protein Applesauce cookies

These cookies are perfect for when you want something a little sweet, but don’t want to totally blow your calories for the day! These are so easy to make and the best part is you can eat the whole batch for under 250 calories! If you have ever wanted to eat a whole plate of cookies, now is your chance! Now if your expecting these cookies to taste like nestle tollhouse cookies or your grandmas homemade chocolate chip cookies than your in the wrong place, but I think they are pretty tasty and definitely help curb my 3 0’clock sweet tooth! Since I am now counting Macros, this recipe makes it easy to get in a few cookies without totally blowing my carbs for the day!

Now, go make these cookies!

Recipe (serves 1):

  • 2 Tbsp. of powdered Peanut butter (PB2)
  • 1 tbsp. of cocoa powder
  • 1 tbsp. of coconut flour
  • 1 tbsp. of stevia in the raw
  • .2 tbsp. of baking powder
  • 1 scoop of chocolate protein powder
  • 1/4 cup + 2 tbsp. of unsweetened applesauce (give or take depending on desired consistency)
  • .5 Tbsp. of fat free sugar free chocolate pudding mix (this can be omitted, but I think it makes it taste a little yummier)

Mix all ingredients together and roll into 1 inch balls on cookie sheet and bake for 5 min. at 350 degree. Makes about 7 cookies.

Valentine’s Day with my loves!

This past valentines day was such a relaxing and perfect day! Jordan and I didn’t go on a date or anything, but instead spent the day with our little munchkin. We woke up nice and early and had a yummy breakfast at cracker barrel, went to church, and then decided to have a picnic for lunch at one of our favorite parks. It was so fun taking Carson to this park because it was where we had our very first Valentines Day date! It’s also where we shared our first kiss 😉

The weather was perfect outside, a little hot for February, but I will take that any day over the kind of weather the east coast is getting right now! Carson really enjoyed feeding the ducks and watching them swim in the lake. I think in general, he just really enjoys being outside.  After our picnic, we all went home and took a nice long nap, ate dinner, had a fire, and then crawled back in bed. It was a great day spent with my two valentines!

Disneyland 2016

I am still on such a high from Disneyland, it was such a blast. We disneyed(is that even a word?) so hard. And by hard, I mean, from 7 in the morning to midnight. The few days after we got back we were so exhausted and kept referring to it as the “Disney hangover”. We had so much fun, probably the most fun we have had in a long time! It was so nice to go on a little couple’s retreat and spend some time with our friends.  Plus, the weather was perfect! There were so many times when we were there that we kept saying, “Carson would love this” or “I cant wait to bring Carson here one day.” But I know that right now, at this age, he probably would not have enjoyed it very much. Plus, it was nice not to have to push around a stroller all day and deal with the tantrums. There were so many little kids that we saw that were so exhausted, but their parents were keeping them out till like 11:30pm at night riding rides. They looked miserable, I felt so bad for them! I mean come on, take your 2 year old home and put them to bed. Ok, rant over. Anyways, as much fun as we had, it sure was nice to come home to our little man that we missed so much.

Thankfully, the park wasn’t very busy on Thursday and Friday, so we were able to get in a lot of rides on those days. On Saturday the park was pretty packed, but we were so tired by that point, I don’t think anybody minded too much.  We got in LOTS of walking and of course, FOOD. We feasted on churros, ice cream, and pretzels. SO GOOD. But after all that unhealthy food, it felt good  to come back home and eat some salad and lemon water for a few days. lol Anyways, here is a few pics from our trip and next time, for sure, we are bringing our little man.

Shiplap wall/home renovations

 

Man, I’m really slacking at keeping up with blog posts. Life has been pretty busy lately, but the good kind of busy! The days that I am home with Carson, I feel as though I cant turn my back for two seconds. Take this morning for example, I was doing the dishes and I turn around to find my son with a mouth full of cotton balls. Like, where does he even find this stuff!?? So as you can imagine it can be difficult to find the time to write a full on blog post.

Even in the midst of all the craziness going on lately, we have still managed to find a few things to fix up around the house, so I wanted to share a little bit of what we have been up to. Little projects like this make us so excited and to our surprise were super affordable! Jordan and I have been wanting to do a shiplap wall for some time now, but we weren’t quite sure where to do it. We finally decided on our living room wall, because it is one of the first things you see when you walk into the house. Now although I was the one who originally begged said we should do a shiplap wall, I must give major props to my awesome and hard-working hubby. He was the one that came up with the measurements, pattern, and hard labor. And as it turns out our living room is slightly slanted, so some of the cuts at the bottom were totally random.

For the wood, we decided on maple plywood from Lowe’s. Which we are extremely happy with! They were even nice enough to cut our wood into 6inch x 8ft strips for us!

Once we got all the wood, paint, and supplies we needed, we got straight to work. Jordan worked on this project for most of the day on Saturday, but was done early enough to go play a round of golf. So it was definitely only about a days worth of work.

After all the wood was up, we decided to paint later on that night after Carson had gone to bed. We used a flat white paint.

We are so pleased with how everything turned out and how cheap it was to do it! With supplies, wood, and paint the overall total was around $125. We were (and still are) so in love with this wall that we even ate dinner in there for a few nights afterwards! This is probably my new favorite room in the house! One thing I also love about this room is that everything in it is either from goodwill, something we made, found on the side of the road and fixed up, or was a hand-me-down(the couches). The only thing we paid full price for in this room was the rug and pillow cases, which were both from Ikea. Okay, and the TV, we got that at Target. lol

We also added some shelves to our spare bathroom for some extra storage and to be able to keep things up high that the little man shouldn’t get into (stuff like cotton balls). This little project was super easy and only took a couple hours total. Total cost for these shelves were super reasonable and came out to be around $30 overall!

Jordan’s birthday weekend/sedona 

I have been a little absent here in blog land, but the past few weeks have been filled with the stomach flu, birthdays, and little getaways! So we have been pretty busy to say the least. January is always a crazy month, but thankfully Jordan and I were able to get away for the weekend to celebrate his birthday in Sedona! We love Sedona and always have such a great time when we are there! We drive up there probably atleast twice a year and try to stay in a different area each time that way we can explore all of Sedona.

This trip was a lot more relaxing than our last trip to Sedona and that is just the way we liked it! We stayed at the Southwestern Inn, which was pretty nice and the staff was really friendly. They made great recommendations for hiking and places to eat! On Saturday, we ate brunch at the coffee pot, which was so good, and then for dinner we ate at the Barking Frog. Which was also really delicious and they have a great happy hour! We watched the Cardinals game for a couple hours there and feasted on some yummy chicken nachos.


  
  
  


  

We woke up early Sunday morning and had a nice breakfast at the hotel and then headed out for some hiking!


  

It was a great weekend away filled with food, hiking, shopping, fudge and of course the cardinals game! I wouldn’t change a single thing! Happy birthday to my Jordan! And of course, as always, we couldn’t wait to come back home to our little man!

Christmas Day 2015

This Christmas, was definitely one for the books. It was filled with so much laughter, family, and fun memories.  I was telling jordan how different this Christmas was compared to last year. Carson was only a few weeks old last year, so everything was such a blur. This Christmas he was crawling around everywhere and getting into everything. He had a blast and it was so fun seeing Christmas through his eyes!

We woke up really early on Christmas morning, so Jordan made a fire, brewed some coffee, and then we just sat on the couch talking for awhile until Carson woke up. Once Carson was awake, we read the “she reads truth” advent and then exchanged gifts. Jordan and I didn’t buy Carson a single gift this year for Christmas, mostly because I knew his grandparents would spoil him rotten (and they did) and because most of the time he would rather play with a box than a $20 light up toy. We are probably going have to use our spare bedroom as a playroom now because of all the toys we have to store!


After we did our own Christmas at home, we headed over to my mom’s and carson had a great surprise waiting for him there.

 He was gifted a V-tech train set and a ride-along car! It took my dad two hours to put that train set together and it took Carson only 2 minutes to break it apart. So he is probably still a little young for it, but I think in a few months we will pull it back out and give it another try. Carson really enjoyed watching the train move though!

 You know he is excited when he makes the scrunchy face.


Unfortunately, I didn’t take a whole lot of other pics, but we did take carson for a ride in his new car with the Duncan fam and he loved it!
