Protein Applesauce cookies

These cookies are perfect for when you want something a little sweet, but don’t want to totally blow your calories for the day! These are so easy to make and the best part is you can eat the whole batch for under 250 calories! If you have ever wanted to eat a whole plate of cookies, now is your chance! Now if your expecting these cookies to taste like nestle tollhouse cookies or your grandmas homemade chocolate chip cookies than your in the wrong place, but I think they are pretty tasty and definitely help curb my 3 0’clock sweet tooth! Since I am now counting Macros, this recipe makes it easy to get in a few cookies without totally blowing my carbs for the day!

Now, go make these cookies!

Recipe (serves 1):

  • 2 Tbsp. of powdered Peanut butter (PB2)
  • 1 tbsp. of cocoa powder
  • 1 tbsp. of coconut flour
  • 1 tbsp. of stevia in the raw
  • .2 tbsp. of baking powder
  • 1 scoop of chocolate protein powder
  • 1/4 cup + 2 tbsp. of unsweetened applesauce (give or take depending on desired consistency)
  • .5 Tbsp. of fat free sugar free chocolate pudding mix (this can be omitted, but I think it makes it taste a little yummier)

Mix all ingredients together and roll into 1 inch balls on cookie sheet and bake for 5 min. at 350 degree. Makes about 7 cookies.

Carson ~20 months~

Carson is now 20 months old, which means he will be TWO in 4 months! 4 months!! Thats crazy, time is flying by and before i know it i will have a 2 year old on my hands. Nevertheless, Carson is in such a fun stage right now. He is so expressive and brings so much joy and laughter to our lives. Don’t get me wrong though, we are in full tantrum mode and there are definitely some not so fun days. Its funny how i always thought i was a patient person, but Carson is continuously showing me I am the furthest thing from it. Carson has such a sweet and sensitive heart and I love that about him. He gets his feelings hurt pretty easily and is always so aware of the feelings of others around him. He always seems to know the perfect time to flash that silly smile of his and it instantly lifts my spirits. Life would be pretty quiet around here without him.

Eating

Carson has always had a good appetite but does seem to be more picky now that he is getting older. Some days he loves chicken nuggets and then the next day he wont even touch them, *sigh* but hey, that’s life with a toddler. Carson loves to eat fruit and will never turn that down. His absolute favorite are blueberries and grapes. For protein, he really likes to eat cold grilled chicken. Yogurt, cheese, graham crackers, lara bars, mac and cheese, avocados, healthy cookies, and hot dogs are also some of his favorite things to eat on a daily basis.

Sleeping-

Thankfully, Carson sleeps great at night and will usually go to bed around 7:30 and sleep in until 6:30am. Naps still aren’t always consistently on time every day but he usually will take about a 1-2 hour nap in the afternoon and will cat-nap here and there in the car. He sleeps with his little stuffed bunny every night 🙂

Playtime-

Carson loves playing with his toys and will grab our hand and pull us to his toys to come and play with him. Still trying to get him to play by himself more and more, but it does seem like the older he gets the more he will sit and play with his toys. He loves playing with trucks, cars, boats and legos. He also really enjoys reading books.

Church- 

Carson enjoys going to church and does really well in the nursery. I love watching him play and interact with other kids his age. It is so cute! They blow bubbles, sing songs, color, and dance to the hokey pokey every sunday (his fave)

tv shows-

I don’t really have a limit right now on the amount of time Carson watches TV, but he probably watches a couple episodes a day of a certain show and will usually play with his toys with it on in the background. This is usually the time when I can clean the house or do whatever else needs to be done because it holds his attention so well! His absolute favorite show is daniel tiger, but also enjoys watching bob the builder and Cars.

Favorite things-

Visiting family, daniel tiger, cookies, playing outside, airplanes, going on walks, his stuffed “bunny”, dancing, singing songs, reading books, and doing the hokey pokey.

dislikes-

Riding in the car, being told “no”, naps, and whenever I try to clean his face.

 

 

Carson had a well check a couple weeks ago and is as healthy as can be (praise God)! He received 4 shots and did great! He got a lollipop afterwards and all was right in the world again! He weighed 26lbs at the office and came in around 43% on the chart for his height. And of course his head measurements were in the 80th percentile range. The Boys got a big head! But, We are so blessed to have such a healthy and growing boy!

Carson can be really shy sometimes but is also so outgoing and loves to wave and say “hi” to everybody when we are out and about. The “climbing stage” and hitting is in full force right now and honestly some days it overwhelms me SO MUCH. I second guess my parenting and question if I am “doing it right”. Just trying to take it one day at a time. It is not easy, but I sure do love this boy and am so thankful for the joy he brings to us.

Valentine’s Day with my loves!

This past valentines day was such a relaxing and perfect day! Jordan and I didn’t go on a date or anything, but instead spent the day with our little munchkin. We woke up nice and early and had a yummy breakfast at cracker barrel, went to church, and then decided to have a picnic for lunch at one of our favorite parks. It was so fun taking Carson to this park because it was where we had our very first Valentines Day date! It’s also where we shared our first kiss 😉

The weather was perfect outside, a little hot for February, but I will take that any day over the kind of weather the east coast is getting right now! Carson really enjoyed feeding the ducks and watching them swim in the lake. I think in general, he just really enjoys being outside.  After our picnic, we all went home and took a nice long nap, ate dinner, had a fire, and then crawled back in bed. It was a great day spent with my two valentines!

Disneyland 2016

I am still on such a high from Disneyland, it was such a blast. We disneyed(is that even a word?) so hard. And by hard, I mean, from 7 in the morning to midnight. The few days after we got back we were so exhausted and kept referring to it as the “Disney hangover”. We had so much fun, probably the most fun we have had in a long time! It was so nice to go on a little couple’s retreat and spend some time with our friends.  Plus, the weather was perfect! There were so many times when we were there that we kept saying, “Carson would love this” or “I cant wait to bring Carson here one day.” But I know that right now, at this age, he probably would not have enjoyed it very much. Plus, it was nice not to have to push around a stroller all day and deal with the tantrums. There were so many little kids that we saw that were so exhausted, but their parents were keeping them out till like 11:30pm at night riding rides. They looked miserable, I felt so bad for them! I mean come on, take your 2 year old home and put them to bed. Ok, rant over. Anyways, as much fun as we had, it sure was nice to come home to our little man that we missed so much.

Thankfully, the park wasn’t very busy on Thursday and Friday, so we were able to get in a lot of rides on those days. On Saturday the park was pretty packed, but we were so tired by that point, I don’t think anybody minded too much.  We got in LOTS of walking and of course, FOOD. We feasted on churros, ice cream, and pretzels. SO GOOD. But after all that unhealthy food, it felt good  to come back home and eat some salad and lemon water for a few days. lol Anyways, here is a few pics from our trip and next time, for sure, we are bringing our little man.

Shiplap wall/home renovations

 

Man, I’m really slacking at keeping up with blog posts. Life has been pretty busy lately, but the good kind of busy! The days that I am home with Carson, I feel as though I cant turn my back for two seconds. Take this morning for example, I was doing the dishes and I turn around to find my son with a mouth full of cotton balls. Like, where does he even find this stuff!?? So as you can imagine it can be difficult to find the time to write a full on blog post.

Even in the midst of all the craziness going on lately, we have still managed to find a few things to fix up around the house, so I wanted to share a little bit of what we have been up to. Little projects like this make us so excited and to our surprise were super affordable! Jordan and I have been wanting to do a shiplap wall for some time now, but we weren’t quite sure where to do it. We finally decided on our living room wall, because it is one of the first things you see when you walk into the house. Now although I was the one who originally begged said we should do a shiplap wall, I must give major props to my awesome and hard-working hubby. He was the one that came up with the measurements, pattern, and hard labor. And as it turns out our living room is slightly slanted, so some of the cuts at the bottom were totally random.

For the wood, we decided on maple plywood from Lowe’s. Which we are extremely happy with! They were even nice enough to cut our wood into 6inch x 8ft strips for us!

Once we got all the wood, paint, and supplies we needed, we got straight to work. Jordan worked on this project for most of the day on Saturday, but was done early enough to go play a round of golf. So it was definitely only about a days worth of work.

After all the wood was up, we decided to paint later on that night after Carson had gone to bed. We used a flat white paint.

We are so pleased with how everything turned out and how cheap it was to do it! With supplies, wood, and paint the overall total was around $125. We were (and still are) so in love with this wall that we even ate dinner in there for a few nights afterwards! This is probably my new favorite room in the house! One thing I also love about this room is that everything in it is either from goodwill, something we made, found on the side of the road and fixed up, or was a hand-me-down(the couches). The only thing we paid full price for in this room was the rug and pillow cases, which were both from Ikea. Okay, and the TV, we got that at Target. lol

We also added some shelves to our spare bathroom for some extra storage and to be able to keep things up high that the little man shouldn’t get into (stuff like cotton balls). This little project was super easy and only took a couple hours total. Total cost for these shelves were super reasonable and came out to be around $30 overall!

Carsons’s mama

I think I have a love/ hate relationship with these kind of posts. You know, the kind were I actually let my feelings out. But in a lot of ways, it’s therapeutic for me and feels so good to just jot it all down sometimes.

In all honesty, there are somedays it’s really hard being a mom. It can be tiring taking care of somebody that clings to you all day long, eats your food(carson freaks out whenever he sees me eating and immediately thinks he should be eating too), and somehow manages to put every crumb of everything in his mouth. Most days, it feels like the only word that comes out of my mouth is “no”, “no, don’t touch that”, “no, don’t go in there” and so on. There are days were there are so many other things I want/ need to get done. Things I want to cross off my to-do lists and goals I wants to pursue. But somedays, most days, I feel lucky if I can just get a load of laundry done. In fact, some nights I feel like a heck of a wife if I have a nice, home-cooked meal on the table.

As I was reflecting this morning and remembering all the stuff I needed to do today. I felt a sudden peace, and as though God was just telling me to enjoy being Carson’s mom today. Now of course, most people, atleast I would hope, enjoy being a mom or dad, but I mean really, truly enjoying the day to day grind. Even the not so fun and messy parts. Because most of us know, life with a 1 year old can be pretty messy, literally.

Even though the day to day can sometimes seem daunting, I feel so blessed to be Carson’s mama. And even though, there are many things I want to accomplish, none of them will EVER compare to the joy and satisfaction of being a mom to my son. Being Carsons’s mom makes me so happy and all these little to-do lists and goals can sometimes get in the way of truly enjoying what’s in front of me. Now that doesn’t mean, I shouldn’t pursue things or never get anything done. But I think it’s important to sometimes take a step back and realize that somedays the only thing I might get done is just a load of laundry and that’s okay.

So for today, I’m clearing my schedule and starting with a fresh mindset. Resting in the fact, that I don’t have to do it all in one day and that its okay to take a step back sometimes. I’m realizing that once in a awhile, It’s alright to “take a day off” and just truly embrace the time and place God has called me to be in right now. So my goal for today is to enjoy and embrace motherhood, to love and cherish my little one, to be patient and kind to him, and if I just so happen to get the dishes done in the process then great, but if not, then that’s ok too.

Jordan’s birthday weekend/sedona 

I have been a little absent here in blog land, but the past few weeks have been filled with the stomach flu, birthdays, and little getaways! So we have been pretty busy to say the least. January is always a crazy month, but thankfully Jordan and I were able to get away for the weekend to celebrate his birthday in Sedona! We love Sedona and always have such a great time when we are there! We drive up there probably atleast twice a year and try to stay in a different area each time that way we can explore all of Sedona.

This trip was a lot more relaxing than our last trip to Sedona and that is just the way we liked it! We stayed at the Southwestern Inn, which was pretty nice and the staff was really friendly. They made great recommendations for hiking and places to eat! On Saturday, we ate brunch at the coffee pot, which was so good, and then for dinner we ate at the Barking Frog. Which was also really delicious and they have a great happy hour! We watched the Cardinals game for a couple hours there and feasted on some yummy chicken nachos.


  
  
  


  

We woke up early Sunday morning and had a nice breakfast at the hotel and then headed out for some hiking!


  

It was a great weekend away filled with food, hiking, shopping, fudge and of course the cardinals game! I wouldn’t change a single thing! Happy birthday to my Jordan! And of course, as always, we couldn’t wait to come back home to our little man!

Carson {13 months}

So even though my big boy is already one, I still want to write his monthly updates here and there. He is growing and learning so much, so I felt the need to document some of it!

Carson is such a bundle (a big bundle) of joy and it has been so fun watching him grow into such a big personality. He has been really sweat and cuddly lately which has been really nice.  But most of the time, this kid is busy, busy, busy! Still not walking yet, but we are getting there! I think I am at the point now where I would like for him to walk, he is getting so heavy! Carson is such a good eater and gets mad when his food is all gone! I swear this boy eats more than me! Some of his favorite foods are..

  • Bananas (he points to them whenever we are at the grocery store and gets so excited!)
  • Cheese
  • Raspberries
  • Oranges (which we just tried for the first time this month)
  • Deli turkey
  • Avocado 
  • Black beans
  • Applesauce
  • Bread
  • Blueberries
  • Kiwi
  • Oatmeal

The only thing that I have found so far that he doesn’t like is mashed potatoes. Which is so weird,  who doesn’t like mashed potatoes??

As far as playing goes, his favorite things to play with are his cars and looking at books! He is also really enjoying his new toy car.

   
   
Other than that, Carson would rather play with boxes and open all the cabinets and drawers in our house. He keeps me busy!

Thankfully, carson is still sleeping pretty well at night and sleeps close to 11 or 12 hours. Recently, he has been waking up around 5:30 or 6 and will join us in bed to snuggle until we get up. Carson is starting to get longer naps in and will sometimes nap for up to 2 hours in the afternoon! Which has been so nice!

I have been trying lately to be more intentional about teaching him things and pointing stuff out and saying what it’s called. He knows where mommy’s nose, eyes, and mouth is, but whenever I say “where is Carson’s nose?”, He still points to my nose!

  
Baby sign language has been going good so far and I am currently trying to teach him to sign thank you. He has only done it one time so far, but I’m pretty sure it’s only because we gave  him a taste of ice cream!

Life has finally slowed down a bit now that the holidays are over, but unfortunately we all caught some nasty stomach flu. So we are taking it easy today. I hate seeing my little guy so sick! Hopefully, it is just a 24 hour thing! I took theses pics below this weekend when we were picking all the oranges off the trees in our back yard. Seriously, so many! #comeeatouroranges

   
 

Christmas Day 2015

This Christmas, was definitely one for the books. It was filled with so much laughter, family, and fun memories.  I was telling jordan how different this Christmas was compared to last year. Carson was only a few weeks old last year, so everything was such a blur. This Christmas he was crawling around everywhere and getting into everything. He had a blast and it was so fun seeing Christmas through his eyes!

We woke up really early on Christmas morning, so Jordan made a fire, brewed some coffee, and then we just sat on the couch talking for awhile until Carson woke up. Once Carson was awake, we read the “she reads truth” advent and then exchanged gifts. Jordan and I didn’t buy Carson a single gift this year for Christmas, mostly because I knew his grandparents would spoil him rotten (and they did) and because most of the time he would rather play with a box than a $20 light up toy. We are probably going have to use our spare bedroom as a playroom now because of all the toys we have to store!


After we did our own Christmas at home, we headed over to my mom’s and carson had a great surprise waiting for him there.

 He was gifted a V-tech train set and a ride-along car! It took my dad two hours to put that train set together and it took Carson only 2 minutes to break it apart. So he is probably still a little young for it, but I think in a few months we will pull it back out and give it another try. Carson really enjoyed watching the train move though!

Unfortunately, I didn’t take a whole lot of other pics, but we did take carson for a ride in his new car with the Duncan fam and he loved it!
